Robert,

Check out Hobbyking.com.  They carry lots of brushless motors and lithium polymer batteries for R/C hobby industry.  Somewhere in there may be an appropriate set of brushless motors, batteries, and speed controllers that may do the job for the ULF-1. 

I got onto this idea because I saw a Lazair ultralight at Oshkosh this past summer powered by two brushless motors, one on each wing, and a large grouping of Hobby King lipo batteries wired in series. He flew for 45 minutes each morning and evening, and the Lazair was even fitted with floats!  You can check out his project on RCGroups.com.

I really feel the ULF-1 is a great platform for this type of experimentation.  Have you ordered your plans yet?
